Consider that Wikipedia describes bleu cheese in part as... ..."The distinct smell comes from both the mold and types of bacteria encouraged to grow on the cheese: for example, the bacterium Brevibacterium linens is responsible for the smell of many blue cheeses, as well as foot odor and other human body odors." I'm a buffalo transplant to the south, and everyone here thinks blue cheese is disgusting... and THEYRE RIGHT! Blue cheese is kind of expensive to keep on hand and anywhere that isn't buffalo uses that gross packet kind. No chunks, just gross dressing. It's an abomination! Unfortunately I've had to become a ranch guy since I moved. Literally in this case, because I am badly allergic to something in bleu cheese. Then again, I'm not much of a wing fan, so... It's not the taste - although I tend to stay away from hot wings. It's the work to reward ratio - there's not enough meat on most wings to make it worth the mess. I'll take tenders or a roasted chicken over wings any day. (No - you CAN'T take my Bills fan card away from me for my heresy. I've been a Bills fan for decades - I survived the 20 year desert. Either blue cheese or ranch is fine for dipping the carrots and celery, but being a tranditionalist, I go with the blue cheese. As a Buffalo native, I just know that's how it's done.
