Eggs: How you eat them

I eat over a half dozen eggs daily. Delicious, cheap, healthy, versatile, etc.  Scrambled, medium, poached, sous vide, quiche, pickled, omelettes,fritattas, egg  on aburger, and egg on everything a la croque  madam or bimimbap,etc......time to cook up some eggs

I eat a dozen raw every day.  With the shells.  Blend it up and suck it down.

 

Alternatively, scrambled, over-easy, hard-boiled.  Always with salt, pepper, hot sauce.  If I'm eating out generally I'll only get them poached to avoid vegetable oils.

My preference is over easy with pepper and Tabasco.  Preferably accompanied by rye toast.

 

Regardless of the way it's cooked, I actually like Tabasco on eggs, period.

 

Hard boiled - just salt and Tabasco.

Omelet - Gotta be meat and cheese. I'm not anti-veggie, but there's a time and a place and an omelet ain't neither.

Burger - Tried an egg on a burger for the first time about 6 years ago.  Fan ***** tastic.  Gotta be over easy.

My wife raises chickens, so we eat eggs regularly. Luckily, they're versatile and we all like them multiple ways, e.g.:

  • Scrambled with veggies (I like mine in a taco shell)
  • Fried, over medium (squishy, but not runny)
  • Hard boiled - by itself with a little salt, in an egg salad sandwich, or sliced into a green salad
  • Omelet, with home fries on the side

Yes, but with the yolk still runny for toast dipping.  It’s a fine line to get a perfect over easy egg.

 

Also like scrambled, with the bacon pieces mixed in.


Or poached.  Wifey made me eggs Benedict on Father’s Day.  Yum.

After reading this thread I suggested to Mrs. Lew that we 

have B L T's  with a fried egg on them .. 

And the eggs to be cooked in the  bacon drippings..   ummm good.

 

yeah, with the retirement thing, dinners are more planned than in the  past.

Reminds me of an old joke/pick-up line(?)...Man to woman: "How do you like your eggs in the morning...scrambled or fertilized?"

 

I like eggs prepared just about any way you can make them although I am not a huge fan of poached. Last time I downed them raw was a lifetime ago in high school when I was training for football. Lately, I've been eating egg white omelettes with Parmesan cheese, chives, a dash of salt, and generous pepper. Today, I added some sliced Boars Head turkey to it. This was accompanied with an English muffin and a side of sliced strawberries and banana.

Over easy or poached are my favorite. A hard yoke really ruins an egg for me.

 

I feel the same way about scrambled. Cooked very slow (with small bits of hard butter mixed in, that slowly melt into the egg). Served soft and tender.

 

I have an egg sandwich for breakfast several times a week. Over easy, a slice of cheese and a thin slice of capicola or some bacon. Yum Yum.

Not much beats a good BEC on a soft roll.  I do miss East coast delis....

Fried over easy; or hard boiled, or soft boiled or scrambled. Depending on mood, will add hot sauce or ketchup sometimes to the scrambled version, on all others basically salt/pepper only. I enjoy adding the fried version to a breakfast sandwich/biscuit with cheese...I think that about covers it :) 

 

Oh wait--one more--a local burger joint down here does a burger called the coronary bypass, using a fried egg on its burger with bacon, tator tots, cheese, etc...that's also hard to beat.

 

In short, one of the best/most versatile foods known, FWIW!

Over easy, sunny side up, poached, hard boiled...all great.  I will eat scrambled eggs also, but they have to be "runny".  If they are not "runny", I usually have to salt and pepper them a LOT in order to eat them.

Love mine scrambled along with bacon, hash browns(not country potatoes) and sourdough toast. Prepare to be grossed out, but I dip my eggs in ketchup. :devil:

 

Also love a good omelette with ham or bacon, cheddar cheese, mushrooms & tomatoes.

Easy over, unless I’m at a brunch where the eggs Benedict catches my eye. A bit rich, but I usually fall for it on a brunch menu. If I’m feeling particularly decadent, a Bloody Mary is a nice accompaniment, but there are limits. One Bloody is good, but plenty. That’s not something you can have too many of. This pairs nicely with a nap in a hammock, I’ve found. 

 

My eggs at the house usually go on fish, after the blackening and flour, and before the panko. Nice and crunchy, we love crunchy fish!

You got that right. Even in NYC and LI you could get a great egg sandwich FAST and very inexpensive. Now, I haven't had been back in a couple years, but I suspect it is still the case. In St Augustine you can get an BEC. Sometimes you can get it on a roll, but they always seem to want to put it on Texas toast, which sucks. They are usually poorly made. Usually use a microwaved scrambled egg patty too. The kicker? $6.50, if you are lucky.

If they're hard boiled, I'll need vinegar and salt.

Years ago working construction, I would come home of the 13 hour night shift, and fry up 7 or 8 sunny side up in a pan, with about 4 to 6 pieces of toast.  Dump one egg into the beagle's dish as a treat, then off to sleep.

I’d be afraid of what might happen to my rugs while I slept!

I don’t want to brag, but since it’s pretty much my lone skill, I will:  I make the perfect scrambled eggs. Cook them perfectly— soft but not runny and not overcooked. Key is good timing, right about if butter in the pan, and salt and pepper at the end after they are done. 

 

That said, I am a fan of over medium eggs with a nice spicy salsa.

Over medium cooked in bacon fat with plenty of pepper, and whatever the cheese of the week is over the top. Rye toast with butter and sausage on the side. Runny yolks but no snot.
