The quitting/retiring in the middle of an actual game that (ostensibly) counts? I'm pretty sure it's happened in the NBA, but right now I can't remember who/when. There's a lot of documented cases of guys refusing to go into a game (in a blowout, etc.), but I'm still coming up empty on a guy actually retiring mid-game.
