i used to go to a sports bar that had buffalo-style TURKEY wings.

 

I'll tell you what, it's pretty good.

I  liquid brined for a couple years, but it's too much work and takes up too much space.

For the last few, including this year, I've dry brined.

Takes more time, but much easier, and great results.

I mean, all you can really do with white meat is make sandwiches and lather them with mayo.  One trick pony.

 

Dark meat is much more versatile.

Trying out a “dry brine” (kosher salt, cracked black pepper, brown sugar) this year and smoking for 4 hours. Will let you know how it turns out!
