No, Rosen was right with 2.

 

What does "stick a fork in it" mean?

 

It means it's done. You test the doneness of braised meat by sticking a for in it. That's the best way to tell when it's done.

Does it always mean that it is really "done" or are there times when the meat has to braised more?

 

I bet the Houston Oilers (among many) were telling each other to stick a fork in the Bills during that famous playoff game! ? I guess the Bills needed to be re-braised... ;-) ;-)

No really, I used to sell (as joints, all rolled up and everything, in above mentioned quantities 5, 10, 15, and 20$ for mex doubled for columbian, times have changed lol), You guys just watched too many movies :nana:

2, it is a test to see if it is done.

Like "drink the kool aid" it is a phrase which has come to mean quite the opposite of what it was in the first place.

It's a way of testing it. If you stick a fork in (a long roasting fork works best) and turn it slightly, if the the muscle fibers easily separate it's done, stick a fork in it!
