  1. For the get off my lawn moment in this thread..I own zero jerseys! Funny to look at pictures of crowds in the 70's and 80's...maybe 10 jerseys in the whole stadium! Those were my formative years. Now it may be no one could afford a jersey, but the excuse we always used was why would you want to act like a cheerleader girlfriend and wear some dudes jersey???? At our high school, that's what the cheerleaders did on gameday. I have not moved on from1977 apparantly?
  2. OT..but fun drinking game is watch pretty much any show on HGTV and do a 1/2 shot everytime the word "budget" is said. you will be pretty liquored up within 30 minutes
  3. never even worried about the final temp..cooked through and all the collagen turned into gelatin in the water bath. So no worries about breaking through the stall and getting to what most briskets nerds would tell optimal final temp of 203. BTW, smoke ring is just a chemical reaction, adds zero flavor, and is one of the great myths of Q! Can always add some curing salt to the salt and pepper rub if you desire a big smoke ring. Using this method, you would think you are eating brisket without the expense of buying a full packer or having to spend 14 hours tending a smoker!

  5. It was really good. I suck at brisket on the Egg, and they are always so freaking big and so much left over, I end up wasting a ton of time and $$$$ Did this with a 3 lb chuck roast...hardest part is putting hickory chunks on every hour. I always have the onions in the fridge, sauce took about 3 minutes to put in the pot(btw, use the drippings in the sauce)..buns are not heated or anything..easy peasy!!! Sothern coleslaw on the side that took 5 minutes to put together..perfect summer Sunday dinner! 3 of us for dinner last night, have just enough left over for lunch sandwich today for me!!!
  6. Ted was the first one who understood online ticket sales..and for one of the Penquin series, he instituted the metro zip code nonsense. Of course, it did not work as the majority of Pens fans in the arena were transplants living in the DMV! Never a ban on the gear though..that is getting like the Premier league! Lets not forget the Pens were a OT Post away from a game 7..and that might not have gone so well when the ghosts of the Cap Center returned! I dont think this series is over by a mile, although I do think the Caps are the best team left. They look great!
  7. ^^^^ @T&CI use Sling at our place in DC, but have two major reasons why I keep DTV at home 1) DVR..I watch nary one thing live.. I tried an online DVR 18 months ago, it sucked but absolutely was most likely user error. Do you have any experience with one? 2) NFL..I need the Ticket. Here is the one thing I am starting to watch live..and I do not want to wait till 8PM or whatever it is to watch on GamePass Fix for those two, and I am all in on Sling. BTW, just skipping commercials is worth $75 to me.
  8. no matter size of roast..recipe still the same! In terms of smoke, can always get about 4 packets ready of chips and do on gas grill..or super easy on kettle too!!!

  11. Made a smoked chuck roast this weekend that maybe was the best brisket I have ever done. Started with a chuck under blade roast on sale at Kroger for $2.77/ib. The recipe I used for inspiration called for a chuck roll roast, but I have never seen that and this is what the Kroger frequently has on sale. kosher salt and fresh ground pepper both sides, then vacuum seal and let sit for 3 hours in the fridge 30 hours in Sous Vide at 135..think could do anywhere from 24-48hrs Collect drippings, fridge overnight for the roast. 3 hours of hickory smoke on Egg at 240. Rest 30 minutes, cut against the grain of both muscles Freakin awesome as is..but added this sauce https://www.thespruceeats.com/central-texas-barbecue-dip-334293 Add pickled onions which I always have in the fridge. https://www.epicurious.com/recipes/food/views/pickled-red-onion-382883 I make the onions and just use a used mayonnaise jar to keep them in the fridge for up to a month. Awesome on so many things. Put the 3 ingredients on a hamburger bun, and I was in freaking heaven!!! So much easier, cheaper, and moister than any brisket I have ever made. The sous vide makes all this work!!!!
  12. see above! Thing is, this place has wings, pizza and beer, and while fine in WNY, tough outside of it. The Buffalo pizza style will last about 10 minutes in SoCal..way to doughy and heavy for anywhere outside of Detriot and Chicago!!

  17. feel for the guy in Richmond. Friend of a friend thing..he had never been in the restaurant business, took most of his retirement money to open this thing. Besides the location, no soft opening but a well-advertised opening weekend. Place was a disaster from a service perspective for a solid two weeks and got lit up online. Those reviews never disappeared, Add in the fact he took a giant space that always made the place feel empty..and the location..he stood no shot.

  19. One in Richmond lasted about 8 months..horrible location and was just to damn big..and the suicides were freaking awful
