I hear you. I'm of the belief that Williams is back. As mentioned earlier, good IOL can be had in rounds 2-4.
Maximize that first overall, even if it means making a strength even stronger.
Or - depending how the players come off, get Josh some high end weaponry. Fill the needs further down as mentioned.
Ettienne or Harris would step right in and make a positive impact and add another dimension.
Is there any way K. Toney makes it to 30? I love how he looks on tape. Looks like he'd shine in our offense. Looks great after the catch.
The more I think about it, addressing the D (pass rush) through FA is the best quickest for immediate impact. Beane's focus, as I see it, will be improving the front 7.
Deciding who stays/goes and working the cap is the challenge. I expect changes along this front 7.
Draft wise - IOL and impactful skill position selections should be his focus. Supply Josh with the tools/protection to help him and the offense continue to evolve.
Re: Bills - would like to see a front seven w/pass rush ability. Maybe it's addressed in FA.
Jets: Man - Any chance they stick w/Darnold? With bevy of picks, they could really do some damage elsewhere.
Giants: Fans would be ecstatic with your rather "offensive" selections. With a healthy Saquon back, no more excuse DJ.

I'm no college guru to be sure - but I just watched highlights of several RBs and Gainwell stood out. Actually, several did. Javonte Williams, Chubba Hubbard, Hawkins.
To your point, not necessary to go RB in 1st round.
