  1. I loved Austin when I lived there. Another downside, although I would arrogantly disagree, is the heat. Or perhaps rather, it is that my girlfriend thinks it's too warm to move there Oh yeah, another downside is that you gotta pay a bunch of money and spend a bunch of time in order to get back to WNY!

The rock climbing there is supposed to be magnificent.

  14. My maiden voyage last night went extremely well! So easy, I followed the seriouseats guide. 2"-thick strip steaks. I feel like I can confidently purchase more expensive cuts of steak now and have it be worth it. I did forget to pat the steaks dry before searing. And next time I will add garlic cloves as an aromatic. Two questions: I want to get a cast iron skillet. This website suggests one from Lodge and one from Utopia. What are the real advantages of one over another? Second, does anyone have any suggestions as to a second EASY recipe to try? I'm thinking something like a roast or pork. Thanks!

In the first two years of the Sabres' current drought (2011-12 and 2012-13), there were 15 teams in the Eastern Conference. Assuming they don't make it this year ( you mcbride... ), and assuming equal odds (as the OP's link does), the odds would be: (7/15)^2 * (8/16)^4 = 1 in 73. So, the Bills' feat is more difficult. The Sabres' odds of missing the playoffs 17 years in row is 1 in 131,072.
  16. Actually, it's worse than I originally thought. Since there were only 31 teams in 2000 and 2001: Edit: Nevermind, There were 16 teams in the AFC all 17 years, so odds of missing playoffs were 10/16 (or 20/32) every year.

  20. Does anyone have advice using these SousVide Supreme Zip Cooking Pouches? I got the Anova and a pack of these quart-sized pouches and some gallon-sized pouches. The reviews on Amazon seem quite mixed, so I'm concerned. I guess the intent of these bags is to lower the bag into the water until all the air is out, and then zip it up. Some posters on here described this method. Is there any concern over this method working or not? Are these bags any better than just doubling up some way-cheaper ziploc bags?

  22. Thanks to y'all, I got an Anova for Christmas! w00t! Its maiden voyage shall be with steaks during the Hokies' bowl game this Thursday. I couldn't find the original SEAR/sous vide thread, but I'll have to go back through the advice in this thread, and I think I'll go through that seriouseats guide as well.
