I would think most Defenders have a pretty good idea when a team will run more likely than pass and vice versa.  

 

Also, does Hairston understand that, even if Worthy "tells" he's "not getting it", it still may be a passing play (to, like, another receiver)?

Hairston is going to be the key to this season. Watching some of the all 22 reviews, he's been a stud the first two games he's played. You were seeing Mahomes get hit and sacked because for once, the backend was holding up. It wasn't just Tre White 2 yards behind the receiver for 60 minutes.

End of the day - It's a lazy habit.  It will re-occur because, you aren't usually thinking about what your "tells" are.  You're (rightfully) focused on who you're supposed to block, whether you're on the LOS or not, route leverage and route combinations and how things all fit together on the play.
