I'm thinking these record viewing numbers in many games are being broken because of one thing, technology. Streaming and digital means of watching allows them to get much more accurate numbers than the old terrestrial ways of watching. Sure the sport has grown and that has contributed, but I have zero faith in the ways they came about getting those numbers in the past.
