I had the opportunity to enter the Sears near me during the holidays and, remarkably, the one in my mall smells precisely like the one I used to go to as a kid at Colony Center in Albany. Not sure how they do it.

I do all beef at 130 degrees. The recipe I linked says at least 18 hours, but I did it for 30. I kid you not...one of the single best things I've done sous vide. Just pull back on the salt a bit. My wife, who would have me install a salt lick in the family room, found it too salty. -
Right. Because telling black people that the Republicans are gonna "put y'all back in chains" is such the moral high road. I'm no Trump fan, but make no mistake, comparing him to Biden isn't a discussion even you are stupid enough to have.

Pork chops I bring to 140. I suspect the challenge with mine was that I was doing 2 1/2" - 3" thick bone in, but would only do them for three to four hours. I suspect they need closer to 24 hours to really break down. This site has some pretty decent charts for meat, like this. Incidentally, I did this recipe last weekend, and while I need to adjust the crust (too much salt for me), damn if it didn't make an amazing meal, with lots of leftovers for sammiches. -

I've done thick-cut bone-in porkchops, and was surprised I didn't get better results. They've always been better if I brine them for 24 hours first, then grill them, but I've never brine them before sous vide bath, so maybe I'll give that a try next because it's one of the better values where I get my meat. Using sous vide for stuffed meat never dawned on me, but I suppose it would be okay. You should give burgers a try, but grind your own beef from brisket. -
To an extent, I think. Hillary isn't the only reason the left has been reduced to nothing more than California, Detroit, and the Greater Macungie Utilities Commission. Most people hate ACA, and I think they generally understand what a total cluster!@#$ it was for most people. More people know someone hurt by ACA then will ever know someone helped by it. Their style of politics has lost in dramatic fashion. Fortunately, they refuse to admit it.

Most of the time, I don't bother with any seasoning pre-sous vide. Maybe a sprig of thyme or rosemary, but I always let steak stand on its own (slab of butter after the sear, and maybe mushrooms on the side), and chicken/pork get tied to a sauce when it comes out of the bag. I may throw a slice of lemon and garlic salt in the bag if I'm doing a lemon pepper thing, but otherwise, sous vide is sort of the fluffer of the kitchen. -
I'm my own boss, so I know what I, personally, need to do to make my company work. That said, I have six employees, all six-figure programmers who work from home. All married, with kids and a mortgage. While we stress customer service, best programming practices, etc., the bottom line is that programmers are useless without their brain. The industry tends to burn them out, and we know this, so our #1 priority for everyone is quality of life. We urge them to be involved in their family. Coach their kids' teams. Take vacations. We help each other when workloads get crazy, or pitch in when life throws them a curve ball. When it's busy, yes, we have to peddle faster, but weekends and evenings are almost always held sacred. And we tell the customer 'no' if it's going to infringe on all of this, and our customers know and appreciate this...or we don't work with them. Screw the French.

First, I'm not sure why you're seeing a fluxuation in temperature. Once it hits it target, it shouldn't change more than a degree one way or another. When it comes to chicken, in particular breasts, this website really breaks it down to what temperature and how long, all based on what you want to do with the chicken (i.e., cold chicken salad or hot meal). I turn to it regularly. -

Will try to expound later when I have more time, but when it comes to bags, the warning is that the bags must be BPA free, and that's not always the case if you buy something pre-packaged. Otherwise, I use my FoodSaver so much, I just buy those bags, usually priced well at Costco. I tried a copycat bag and it never worked right. -

I actually am waiting for him to do something especially ridiculous. I mean, the kind of stupid gesture that will, as presidential legacies go, be a fantastic blaze of glory. Something like sign an executive order to create a $3 bill with his face on it. Or force all golf courses to have his face on every flag on every hole. Or extend unemployment benefits from 99 months to 99 years. Something truly Obamatastic. -

I agree on the Lodge choice. This is a pan that will go to your grandchildren if you just take time to clean it properly after you use it. One of the tricks is course sea salt. Grab a box of Morton kosher salt and keep it near your stove or sink. You never want to use soap to clean the skillet, or anything else you use (sponges, etc.) to wash dishes, so put the skillet on the stove, turn the heat on, and when the pan starts to heat up enough to soften the fat, turn off the stove and pour a decent amount of salt into the pan. Grab a paper towel and use the salt as your abrasive to scrub the bottom of the pan. Not only does it get the tough stuff out, but it also absorbs the fat. Pour it into your trash can, rinse the skillet with water, wipe it off with a fresh paper towel, and you're ready for the next run. -

Interestingly, one of the few times the mainstream media got its panties twisted by Obama had to do with them sidestepping the media. In situations where a few photographers were usually always available to grab some shots for AP, the Obama WH chose instead to release their own staged photos, and the media pissed itself harder than Ozy watching a black person drink from a public water fountain. I'm not fan of this because the media does have a role to play. The problem is they no longer play that role, but are a media arm for specific parties and elected officials. They did this to themselves, and while I'll get some enjoyment out of watching them go crazy over Trump, it's a bed they made on their own and it's one I hope gets remedied one day. Not holding my breath on this.
