  6. To be honest, you don't know if the other receivers are getting separation or not because NP is a one read QB and goes to the first guy. His other reads could be open, who knows.

  8. Oh I agree, they've been horrible on run plays and the holds/penalties but I think you can evaluate Peterman.
  9. THey haven't been bad in pass protection. He's had time to throw. There was one pass play where they were in his face. He's rushed throws, made bad throws and panicked. He's been bad.
  10. He's not even the worst of 32... he's the worst of probably 42ish. There are probably 41 guys that can play QB better than NP can, who are in the league right now. Either backup or starter.

  15. Sorry but they had one play where Peterman dropped back and didn’t have time to pass. In the first series both passes Peterman had plenty, plenty of time to throw and panicked and did nothing.

  17. The week to week bit is big. Makes you think he might not be ready for the 16th.
  18. The confit bit is right at the beginning. Confit means cooking in fat/oil/grease at a low temperature for a longer period of time. Hence the 225F for 20 mins. The second fry is only to crispin the skin.
  19. I go even lower in temp on the first cook, low and slow. Locks in the moisture. I do 225F for about 20 mins, but I just watch the chicken more than watch the clock. When the skin is just starting to crispin, I take them out, before they brown. I am anti brining.
  20. It's the closest I've come to getting wings as crispy as they are at some of my favorite places. A lot has to do with not having a really good fryer. The sauce definitely sticks to the wing better as well. Haha, yea I see it and think the same thing. It's the closest I can make wings to my favorite places. Then it's all about the sauce. His sauce isn't great, I do a bit more than just Franks and butter.

Hence “frying” at 225F. So the wing is confit first, which as you correctly stated locks in the moisture while also pre crisping the skin. This allows for a crispier skin when you fry them at the higher temp. Frying typically takes place between 375-400F
