I don’t think you know what one year wonder means.

Pickens?  540 Career receptions. 99 and 100 catch seasons.

Warner? 4x 1000 yard seasons. 56 career TD. One of the most beloved Seahawks players ever.

Turner? 3x 1000 yard seasons. 7300 career yards. 66 TD.

Staley? 3x 1000 yard seasons.

I was in Philly for the Andy Reid years, Duce Staley was a terrific back. Had 3 seasons of @1500+ yards rushing and receiving. Tough crowd. Injury hurt him after back to back 1500 Rush/receiving years, still came back a year or two later for another 1k rush 1450+ performance. He was a key to that Eagle team that made 4-5 NFC championship games.

this list in general is not good. Warner and Turner were both good lead backs and played in rotations for chunks of their careers.

Didn't read through all six pages but Robert Edwards, Patriots pro bowl running back during his rookie year of 1998. Scored rushing TD's in each of his first six games as a rookie, Los tied that record in 2015. Blew out his knee during the rookie flag football game at the pro bowl. Almost had to have it amputated. Was out of football until 2002 when he made a brief comeback with the Dolphins, also had a couple decent seasons in Canada. If memory serves (it almost always does,) the Patriots lobbied hard to get first round pick compensation since he was injured in an NFL sanctioned activity, but were denied.
