after Thanksgiving family tradition is to make turkey tacos. I'll post what goes into it.  They are delicious. these measurements are approximate

 

6 cups leftover turkey meat shredded/ chopped

1 Cup chopped Celery, 1 cup chopped  onion

2 cups potatoes chopped small chunks

1 12 ounce jar green Olives drained

 

4T chopped garlic

1T oregano

salt and pepper to taste

cumin powder lightly to taste

 

2 dozen corn tortillas

4 cups shredded cheddar cheese

shredded cabbage or  lettuce

oil for frying

salsa of your choice to garnish

 

 

put water about 1" over the ingredients and simmer/ boil is okay until the potatoes are soft. stir and don't let burn.  taste and adjust spices 

 

once the meat mixture is reduced and ready  fill a corn tortilla with about 2T of meat (Drain liquid so meat is dry) and top with cheese, fold over and fry in skillet in hot oil each side until brown

 

drain on towels and then serve with lettuce , cabbage my favorite,  and salsa

 

soooo Good. Enjoy

Same here.
 

My sandwich today: homemade sourdough bread (toasted), turkey, bacon, cheese, mayo, guacamole, lettuce, and tomato. Touch of cranberry sauce in there.
