I disagree.   Plenty of people in plenty of business fields that have no clue what they're doing. It's no different with beer.

But it's not about as you say the ingredients they are "randomly dumping" in a beer. There is absolutely nothing random about the basic recipe for any given style. They all know the framework of grain bill, hops and yeast strain they need to use to brew a style. Whether or not a beer turns out bad, decent or exceptional is all about process control. Mash conditions, water chemistry, hop utilization, fermentation conditions etc.

There are more than a couple microbrewers out there that were stock brokers 2-5 years ago and have no knowledge whatsoever about brewing beer.   They got a home brewing kit for Christmas and decided it was for them.

i've had beers that tasted like dish soap from micro breweries that had no clue what they were doing.    There is more than enough random ingredient dumping going on in the market.

Nope. They all know what to do, whether they control the process right determines the beer quality.

Outside of WNY most people's benchmark for wings is Buffalo Wild Wings.  When I hear people from outside the WNY area talk wings, they focus more on sauces and flavor.  There is less emphasis on how the wing is cooked and it shows.

Coincidentally, I made some wings yesterday.  3 batches each with a twist: 8 wings with baking powder dry brine fried for 12 minutes; 8 steamed then fried; 8 Korean style with seasoned corn starch breading and a double fry.  The combo cook/double fry were the best.  I'm thinking a 12 min fry, a 20 minute rest, and a 5 minute fry is pretty ideal.

Exactly. In my experience undercooked wings with rubbery skin are the norm outside WNY.

  4. Whatever you enjoy then I say drink up!  However, lets also not pretend that macro american light lagers are something different than what they are: mass produced, cheaply made (with corn and rice adjuncts) bastardized versions of classic european lagers.  If that's what you enjoy then more power to you. I'll have an ice cold one or few myself every now and then on a hot day after yard work. There's a time and place to enjoy all the styles.

And randomly dumping hops into a vat of beer and calling it "Craft" isn't always a good thing.  I've had IPAs that were disgusting because people haven't learned how to balance flavors they just pour and pray.

IPAs are the most overrated beer in existence IMO.

They sell...that's why they are everywhere.  There's very few craft breweries that don't brew an APA and/or IPA because to do otherwise would be to ignore what the craft beer drinking public wants.

And trust me, there is absolutely nothing random about what hop varieties brewers "dump" into their beer. Especially for styles that are intended to showcase hops like an IPA.

  5. Update on call back today.

Original offer yesterday was $55 of bill for 12 months

Today I was able to get $16.50/month off ST Max and $60 off for 12 months.

One option she gave me was to completely cancel today and call back before the season and I might get an even better offer, but I decided to just take what I could get now.  Either way she did recommend to always cancel the package after the season so that it doesn't auto renew as it puts you in better position to negotiate and get enhanced discounts in the future.

  6. Just placed my yearly call

customer since 2002, but not an AT&T customer.

First CSR from India offered $16 credit per month for a year. I asked to be transferred to customer loyalty and initially received the same $16/month offer.  I then told her I'd have to discuss with my wife, bills are tight and my wife wants to cancel DTV altogether and cut the "cord" yada yada....  She puts me on hold for 10 seconds and comes back with $55/month credit for 12 months, no contract.  I then asked to have my account noted with that offer as I still have to discuss with my wife.  I'll call back later today or tomorrow to see if I can do better, but if not I guess that's not too bad.

  7. I live in Raleigh, but just spent the last week in Portland and Bar Harbor. Everytime I wore something Buffalo related I got a Go Bills from multiple people...probably 20 times over the week. Two highlights..

The solitary guy standing on the side of a remote trail on the summit of Cadillac mountain in Acadia.

A younger guy at a Portland waterfront bar who was on a bachelor party weekend with his friends from Philadelphia.  He ended up ditching his buddies to have a few beers with my wife and I.

  8. So like with most things this is about shock value marketing.  Using standard microbiological techniques they isolated some pure lactobacillus and introduced it into the beer. The key word here is isolated...its a pure culture that may or may not have been isolated from a models vagina. I'll lean towards not, but even if it was I'd still try it. It's the same probiotic bacteria that you'll find in yogurt or sour pickles for example.
