Sweetbread is cow brains. In olden times, they were seldom consumed, because the high nitrogen content of them was put to the better use of tanning hides.

Sweetbreads are typically the thymus, but can be extended to describe any "edible" gland from an animal. I don't think the brain is classified as a "gland" although there are some parts that are (pituitary and pineal), and I've never heard of brains being called "sweetbreads." But hey, it's all disgusting to me anyway.

Yes, it's a general catagory, but the common culinary usage refers to sweetbread as being animal brains (cerebrum). The thymus might be best considered as an "appetizer". :D

Perhaps he wanted to garnish the dish with a creamy Au Jus?

Next will be the Testicle Eat contests at state fairs. Who do you think will win, the skinny Japanese guy or a porno queen? The Japanses guy can down a lot of weiners in a short time but the contest will come down to who handle the balls better?
