Instead of home fries or potatoes with breakfast:
In a medium hot fry pan - with a little oil
(salt pepper to taste while cooking)
Caramelize onions,
add sliced up red, green, yellow peppers (spicy ones can be added if you like)
Add can of drained / rinsed black beans
at very end wilt spinach into the mix
spoon some on to a plate - slide a couple of fried eggs on top (throw some Tabasco on it if you like)
You have a very healthy breakfast
