  1. Is it weird to wear a jersey with another man’s name on it?  I never thought so.  Nobody has ever come up to me (a 40+ year old white dude) and been frustrated by the fact that I’m NOT Bruce Smith, ever.

What’s weird to me is the guy who puts his own name on a jersey as though he’s a member of the team.  Pure fantasy there.

Au jus = for French Dip

Au jus + spices = for Italian Beef

    Gravy = Beef on Weck

A good beef on weck sandwich has thickened sauce... Au jus is too thin and simply a bastardization of the original recipe.   People are doing it all wrong.  It ain't French Dip on a kimmelweck and it certainly ain't a spicy Italian beef. It's ***** -ing simple with a thickened sauce, roast beef in a thicker gravy.

    😏

From Schwabls which was one of the original recipes, invented the damn sammich... 😆

    Hand Carved Roast Beef

Robust 1/2lb. serving of our in-house roasted beef, hand-carved to your liking. served on your choice of kümmelweck, bread with gravy or without.

    I prefer au jus.  But...

Napoli's in Utica makes a beautiful round roll. Call ahead. They have limited hours. If you ask far enough ahead, maybe they could bake on some caraway and rock salt for you. And while you're there get one of their tomato pies.

As for the beef, an easy cheat is to get some rare deli roast beef, whip up a pot of au jus, and soak the beef in it just long enough to warm it before serving.

My local source is actually Utica Bread. Their website says they make kummelweck rolls. They even had a picture of one that certainly looked the part. I’m gonna try them and see. I will let you know.

Napoli has good pie, but I’m more partial to Roma. Danielle’s is good too, it’s different, but very good.

  4. I’m out of town and left to my own devices for beef on weck. So I’m looking for some tips on what cuts people are fond of and any other tips (like cooking times, temps, etc.).

I did find a place to obtain rolls locally (I’m near Utica). I tried to make my own last year and they were not very good (barely passable, actually).  With the rolls being made for me, I can focus on the meat.

Thank you in advance. Go Bills!

  5. When I scan his weekly manifesto, I find myself using a whining tone.  I’m not a huge fan, but I still check in. Some of his insight into non-football stuff can be cool. But sometimes he gets too political. He’s a hard left guy, fine.   But I’m not looking for politics when I read King.

I don’t agree with his SB take, mainly his confidence in Stafford. He likes Stafford (age 33) but throws shade at Sanders (age 34).

    You should do haiku

When you finish a post, right?

    Nah…. Let’s go Buffalo!

  6. We watched Trent Edwards start a season opener against the Dolphins and he got whooped... bad!  He took a sack on the opening play of the first drive.

Later in the game a guy with an Edwards Jersey stood up on his seat (section 123-ish) and took off the jersey.  He growled, roared and contorted his face while he tore the jersey into shreds.  Those of us in that section laughed our asses off and went wild cheering him on.  It was the best thing I saw that day.  I don't remember if Trent finished that game (I believe he did).  My recollection is that the shredding happened late, probably fourth quarter.

That's nonsense. He had a few scheduled weeks off this year that were predetermined. From his interview with Schopp last year he wanted to come to Buffalo to call a game, whatever that's worth.

If you heard it on wgr, it might have just been a knucklehead caller.

It definitely wasn’t a caller, But I believe it was Howard and Jeremy talking about it. They didn’t seem to know what it was about either. They were kinda joking about it. But it sounded to me like there was some sort of lore, legend, or tale.

  8. As OP, I just thought it was a strange thing that Michaels would swear off a town like that.  I was just wondering if anyone else heard that too.

Personally, I don’t care who calls the game. They all kinda have the same shtick.  I’m used to them all, I guess.

I spent a lot of time in ‘Cuse growing up. Tirico got his start there on channel 5 coming out of college.  He was like weekend guy before he left for ESPN.
