My emotions are all out of whack I hate seeing Allen get sacked and yet I am excited for what Epinesa is going to do! This is like Jalapeño ice cream it is cold but hot.

Technically that's not a sack.  Looks like a run play, that's a tackle for loss.

It first I thought it was a bad read by Josh on the option. After watching a second time, I see that AJ was going to make the tackle no matter who had the ball - he was unblocked.

The man in motion might have gotten around him, but I don’t get why they don’t instinctively chip once they don’t get the ball. Poor execution all the way around. Woof.

Likely, he's unblocked by design.

They're read optioning the DE:

If the DE crashes on the ball carrier Allen pulls the ball and run.

If he maintains the edge Allen hands the ball off.
