I'm not a great cook but I make certain specific meals great, so people think I am. I've been told over the years that I should open a restaurant. One of the tricks is to make up for skill by using expensive ingredients so yes, people might like my food but I couldn't sell it for a profit. Besides, I don't want to work that hard. Maintaining consistency seems like it would be maddening. An entirely different deal than cooking at home. I got lots of respect for restaurants that are quality all the time. So many of us worked together or know someone who knows someone we worked with. And add to that we all knew the same drivers who delivered supplies to us all and told us what was happening in other kitchens. Well there was a Chef in LA who had a reputation as being a huge dick. Joachim Splichal! One day the word got around to all the top kitchens that Joachim’s Sous Chef punched him out. I think it was one of those drivers who told me. My Chef was a good friend of his so we just kind of kept our heads down chopping away nodding our heads slightly saying to ourselves “bout ***** time”. We obviously don’t prepare our youth for life altering decisions. I don’t think completely wiping the slate clean is the answer..reinforces bad behavior and sets a bad precedent (we have enough of those.) at the same time, being the defining negative impact in a young persons life for decades is also not ideal. Making it easier to discharge student loans when filing for bankruptcy is a good first step for those truly struggling. The ambiguity of the Brunner test is a joke.
